By no means am I a professional cook but as many people have been asking me about the recipe of this gorgeous cranberry pie after I posted the photo on istagram, here it is. Hopefully, someone will find it useful. My mum always taught me to use healthy food that I don’t normally eat in a way that won’t make me hate it even more.
As you can guess, I don’t eat cranberries a lot. I know that they have a lot of vitamins though. And our bodies need those vitamins, especially during winter season.
So, the ingredients for dough:
2 cups of flour
100 g butter
2 egg yolks (don’t get rid of whites, you’ll need them)
½ cup of sugar (I use brown)
a bit of vanilla
Preheat the oven to 200. Mix and stir all of the above, the dough has to be pretty thick and barely stick to your fingers. Make of it kind of a basket that will soon contain cranberries, put it into a cake pan or whatever you want your pie to be in. I used baking paper at the bottom to avoid rubbing it with butter. Now put it into the oven for 20-15 minutes until it becomes light brown.
In the meantime, mix these:
1.5 cup of cranberries,
150 g sugar,
1 teaspoon of starch, not to let cranberries spread and run away.
And separately beat up these:
2 egg whites + 2 tablespoons of sugar.
When the dough in the oven reaches proper condition, take it out, put cranberries then whites on top.
Now bake it all for about 15-20 min more, till the whites start getting darker. The top is supposed to become fluffy but it may fall by the end. It’s tasty both ways.
